Three Shores From Home

We are a Singapore kitchen, and that is the whole story.

Tamil hands, Singapore soul. This is authentic Singaporean hawker food, cooked from scratch in Fremont by people who learned it in the food halls it comes from.

Singapore is a small island that the whole of Asia passed through. Traders, migrants and cooks from South India, the Malay world and southern China landed there and stayed, and what grew out of that is one of the most remarkable food cultures on earth. Not one cuisine borrowing from another, but many kitchens standing shoulder to shoulder under a single roof, every day, for generations. That roof is the hawker centre, and UNESCO now lists it as living cultural heritage, the first street food culture in the world to be recognised that way.

That is where we come from. We cooked in Singapore, in the hawker centres and kopitiams, where a stall lives or dies on whether the queue comes back tomorrow. There is no room to coast in a hall like that. You cook the same thing to the same standard every single day, you keep your station spotless because everyone can see it, and you price it so that anyone can afford to eat well. Nobody there talks about authenticity. They just cook it right, and the neighbourhood decides.

We grew up eating at those tables, elbow to elbow with strangers who turned into neighbours somewhere between one plate and the next. That is the part people miss when they call this an Indian restaurant. We are Tamil by root and Singaporean by upbringing, and the two are not in tension. Tamil is one of Singapore's four official languages. Tamil communities have cooked on that island for well over a century and a half. Singapore is not a stop on our story. It is where the story actually happened.

So when we say Singapore Tamil Kitchen, it is not a label we chose because it sounded good. It is a standard we brought with us, and it is why we will not water a recipe down or cook it somebody else's way. Every dish here is made from scratch, kept 100% vegetarian, priced the way it is priced back home, and cooked exactly as it is cooked there.

Fremont is where the line ends, for now. Three shores, one long table, and a standing invitation to sit a while and eat well. Majulah Singapura.

Where is Singapore?

Singapore is a tiny island nation in Southeast Asia, at the southern tip of Malaysia, only about 85 miles north of the equator. Many people cannot find it on a map.

Singapore is one of the most crowded places on earth: nearly 6 million people live on just about 270 square miles, roughly the size of a single city.

A language that travelled

Tamil is one of Singapore's four official languages, alongside English, Malay, and Mandarin. Tamil communities have cooked there for well over 150 years.

Here is what we are proud of: every batch is made in house every other day, the very same batter we spread on our griddle. It is stone-ground, naturally fermented, and stored with no chemicals and no added preservatives. Just rice, lentils, and time.

Hawker training does not let you cut corners on cleanliness, because in a food hall everyone can see your station. We run this restaurant the same way.

A few things guests ask us often. We hope these answers help, and you are always welcome to call us if you would like to chat.

Do you still have that offer or promotion?
Our promotions are limited-time only, and we always list the dates right on the offer. Once a promotion has ended, we are no longer able to honour it, so please do check the dates before you visit. Thank you so much for understanding.
What comes in your dosas?
Every dosa is served with sambar and three fresh chutneys: coconut, coriander, and tomato. If you would like it filled, we add masala, our spiced potato filling (as in a Masala Dosai). Just pick the dosa you like from the menu and it comes ready to enjoy.
Which items are Jain?
We are happy to serve Jain sambar on request. For a Jain meal, please avoid dosas that come with masala, and ask for only the coconut chutney, our coriander and tomato chutneys contain garlic. Our staff are glad to guide you.
Do you do customisations or substitutions?
We keep our recipes just as they are. We take a lot of pride in preparing every dish the traditional way, so we are not able to offer customisations or substitutions. If you have a dietary need, we would be happy to suggest a dish that works well for you, or feel free to give us a call and we will gladly help. You can read what every dish tastes like before you order, and our kitchen standard explains the policy in full.
How clean is the restaurant?
Cleanliness is a standing routine here, not an afterthought. Tables, chairs, cups and floors are wiped down every shift, and each table is cleaned again as soon as guests are finished. Floors are swept, vacuumed and mopped daily. Every dish is inspected for quality before it leaves the kitchen. We ask guests to stack plates and clear their trash, and signs throughout the restaurant say so, but when that does not happen our staff clean it themselves anyway.
What if something is wrong with my meal or my table?
Tell any member of staff straight away. It is our first priority and someone will come and put it right immediately. Raising it while you are here is always the fastest fix, because we can look at it, explain it, or replace it on the spot.
Can I open a Dosa Express in my area?

Can I suggest a dish or a song?

Are all of your dishes vegetarian?
Yes. Everything we serve is 100% vegetarian. Items marked "NV" are non-vegan, meaning they contain dairy.
Do you take orders over the phone?
We are not able to take orders by phone, sorry about that. Please order online for pickup or delivery, or come visit us in person. You are always welcome to call us with any questions though.
Do you sell your batter to take home?
Yes. We package our fresh, in-house dosa and idly batter in 32 oz and 64 oz sizes. It is naturally fermented with no chemicals, and keeps up to two weeks refrigerated once opened. Ask our staff for the day's batch.
Where are you from?
We are from Singapore, and our roots trace back to Chennai in South India. Those are the recipes we grew up with. They matured over the years in Singapore's hawker centres, and we brought them all the way here to Fremont, California.
Are you open on Tuesdays?
We are closed every Tuesday. We are open every other day for breakfast, lunch, and dinner, with an afternoon break from 2:30 to 5:30 PM. See our full hours below.
Do you cater events or large orders?
Yes, we would love to. We offer catering and on-site dosa parties, with dosas cooked fresh right at your event. Please call the restaurant at (510) 275-5676 to arrange, and kindly place catering orders ahead of your needed date so we have time to prepare.
